Walnut Tea Cake My dad loved sweets....but walnut cake was his favourite....it always held a special charm for him....even tho he was very strict with his diet after he developed diabetes, there was no limit when there was walnut cake around... today is his birthday and in remembrance of all the memories I made a walnut cake that I made so often for him 100 gms butter 80 gms sugar A few drops of vanilla essence 2 eggs 100 ml milk 1 tsp baking powder 1/4th tsp baking soda 200 gms flour Two handsfull of chopped walnuts Preheat oven to 180 degrees and prepare a cake dish by applying a thin coat of butter and dusting with flour Cream butter and sugar till smooth, add the essence, eggs and milk, beat on high speed Sift flour baking soda and baking powder and add to the wet mixture in three portion mixing thoroughly.. lastly adin the walnuts Pour into the prepared baking dish and sprinkle a few walnuts on the top....bake for 45 minutes or till a skewer inserted comes out clean

Apple Pie For the crust 2 1/2 cups all purpose flour 1 tablespoon sugar 3/4 teaspoon salt 10 tablespoons chilled unsalted butter,  1/4 th cup oil (preferably chilled) Some ice water Mix flour, sugar and salt. Add butter and oil and mix until mixture resembles bread crumbs. Add a tablespoon at a time of ice water and mix until moist clumps form, adding more water by teaspoonfuls if dough is dry. Gather into ball; divide into 2 pieces. Flatten each into disk. Wrap each in plastic; chill 2 hours.  For the filling (remove the dough from the fridge before proceeding with the filling) 3 apples peeled and sliced fine 3/4th cup brown sugar 1 tsp cinnamon Zest of an orange 2 tablespoon of orange juice Mix all the ingredients together. And keep aside. Preheat the oven to 200 derees Roll the dough to 1/4 cm thickness about 3 inches more than the diameter of your pie dish, transfer to the pie dish.
