Apple Pie
For the crust
2 1/2 cups all purpose flour
1 tablespoon sugar
3/4 teaspoon salt
10 tablespoons chilled unsalted butter,
1/4 th cup oil (preferably chilled)
Some ice water
Mix flour, sugar and salt. Add butter and oil and mix until mixture resembles bread crumbs. Add a tablespoon at a time of ice water and mix until moist clumps form, adding more water by teaspoonfuls if dough is dry. Gather into ball; divide into 2 pieces. Flatten each into disk. Wrap each in plastic; chill 2 hours.
For the filling (remove the dough from the fridge before proceeding with the filling)
3 apples peeled and sliced fine
3/4th cup brown sugar
1 tsp cinnamon
Zest of an orange
2 tablespoon of orange juice
Mix all the ingredients together. And keep aside.
Preheat the oven
to 200 derees
Roll the dough to 1/4 cm thickness about 3 inches more than the diameter of your pie dish, transfer to the pie dish. Add the apple mixture....then decorate the top o the pie...I have used cookie cutters for this but you cud also make a simple lattice design with srips of the crust dough. Brush with milk and sprinkle some sugar on top
Bake in the oven at 200 degrees fo 10 mins, then reduce temperature to180 degrees and let cook for approx an hour and 20 minutes.....keep checking the pie after an hour....the filling should be thick and bubly
